Project Nourished reexamines modern methods of dietary consumption by allowing participants to experience fine dining without concern for caloric intake or other health-related issues. By merging the physicality of molecular gastronomy with virtual reality, we can finally enjoy any food we want in a whole new way.

Rather than mirroring the every foods that we are used to, you will preconceive your very own gastronomical experience that was said to be impossible. Imagine being able to dine in the world in your favorite storybook or film, enjoying foods that are completely out of this world.

Project Nourished makes food more sustainable by utilizing ingredients such as algae and yeast. The technology can even be used to preserve foods for the future generations by creating chemical and digital carbon copies; in case of overfishing or natural disaster.

How does it work

The diffuser is used to dissipate the smell of various foods using ultrasonic and heat.

The headset provides visual simulation of environment and alters the aesthetics of food.

This device mimics the chewing sounds that are transmitted from the diner’s mouth to ear drums via soft tissues and bones.

The gyroscope and food detection sensor in the utensil allow the diner’s physical movement to be translated into virtual reality.

The glass with built-in sensors is a vessel for beverage and creating simulated intoxication.

Our perception of a meal relies upon different sensory input derived from the visuals, flavors, scents, textures, consistency and auditory feedback of what we eat. By isolating various flavor compounds and recreating their taste and textural profiles — coupled with virtual reality, aromatic diffusion and auditory sensation — we can mimic a surprising amount of eating experience.

People with overweight problems or disorders such as Prader-Willi syndrome or binge can learn to eat less by associating certain foods to unpleasant memories.

ALLERGY + DIABETIC MANAGEMENT

People with dietary restrictions such as allergy and diabetes can eat whatever they want without having any harmful effects on their body.

EATING THERAPY

Patients with eating disorders such as anorexia and bulimia can build regular, healthy eating habits by receiving virtual psychotherapy.

ELDER + DISABILITY CARE

Stroke patients or elderly who are unable to chew or swallow food due to dysphasia or gastrointestinal disorders can experience eating in virtual reality.

This can help children to form healthy eating habits by encouraging them to eat undesirable foods in fun ways.

A diverse range of foods can be enjoyed by astronauts traveling for an extended amount of time in space while boosting morale and minimizing payload.

What is Kokiri Lab?
